This is dedicated to all the chefs who warn you never, ever put fish and cheese together, and yet they're at the restaurant at 2:00 a.m. And what do you think they eat? The tuna melts. And the reason for this is because it is tasty.

1 tsp of Asian chile paste (such as sambal oelek)

1 qty of salt and ground black pepper to taste
2 tbsp of softened butter, divided
2 qty of thick slices French bread
0.5 cup of shredded sharp white Cheddar cheese, divided
1 qty of pinch cayenne pepper, or to taste
