Naturalized Yucatecan, the kibi or kibbeh is a snack present in the cuisine of Syria, Palestine, and of course Lebanon, which has it as a national dish. In the Middle East it is customary to prepare it with ground lamb meat, in addition to seasoning it with pine nuts, mint and cinnamon, it can be eaten raw, baked or fried and it is a meat croquette, which makes it different from the product offered by the kiberos (street vendor of kibis) that transport these appetizers in emblematic glass boxes and whose empty anatomy is usually filled with chopped cabbage, onion and of course habanero pepper.
