Beef Kaldereta (Caldereta) is a traditional Filipino stew served at celebrations and special occasions. Kaldereta is traditionally cooked with goat meat. However, because goat is not always readily available, beef, chicken, or pork can be substituted.

1/2 cup vinegar

6 whole peppercorns crushed

4 cloves garlic crushed

4 tablespoons vegetable oil

1 onion sliced

1 cup tomato sauce

1 bay leaf

2 teaspoons sea salt

1 teaspoon sugar

2 cups water, or more as needed

1 red bell pepper, cut into strips

1 small carrot, peeled and diced

1 potato, peeled and diced

1 teaspoon Tabasco sauce or your favorite hot sauce

1/4 cup liver spread

1/2 cup frozen peas

Grated cheddar cheese (optional)
