This Thai cucumber salad dish is simple to prepare and bursting with the flavors of Thai cuisine. It's one of my all-time favorite salads from any and all cultures, and it just takes 10 minutes to make. Serve this one-of-a-kind and nutritious salad as a side dish at dinner, or as a light and delightful lunch or snack.

Ingredients

1 qty of cucumber (or 2 field cucumbers, washed and dried)
1 qty of shallot (minced or 1/4 cup minced purple onion)
2 qty of green onions (finely sliced)
1 qty of fresh red chili (de-seeded and minced, or 1/4 cup diced red bell pepper)
0.5 cup of fresh cilantro (roughly chopped)
2 tbsp of fish sauce
0.5 qty of lime (juiced)
1 tbsp of soy sauce
2 qty of cloves garlic (minced)
0.5 tsp of cayenne pepper (to taste)
2 tsp of sugar (or more, to taste)
