Chayote is a vegetable native to Mexico and Central America that belongs to the gourd family. Although it is not a common Korean cooking ingredient, I discovered that it works well as a substitute for Korean radish when making kkakdugi (Cubed radish kimchi)style kimchi.

Ingredients

3 lbs of deseeded chayotes (4 large chayotes)

2 tbsp of kosher salt

4 qty of garlic cloves

1 tsp of peeled ginger

0.25 cup of worth onion

0.25 cup of fish sauce (or soy sauce)

4 qty of green onions, sliced diagonally

0.5 cup of gochugaru (Korean hot pepper flakes)
