Bourekas are Middle Eastern hand pies that are excellent. These baked, filled pastries are famous across Israel and the Middle East. Different variants of this turnover pastry may be found all throughout the globe, including knishes, calzones, samosas, bridies, and strudel. Bourekas originated in Asia as burgas, which are deep-fried stuffed dumplings. When Turks from Central Asia immigrated to what is now Turkey, they took their filled burga dumplings with them. The dumpling developed into a variety of filled, stacked pastries known as börek throughout time. The pastry was adopted by Sephardic Jews who settled in Turkey, who combined it with their version of the same meal (empanada) and adapted it to make it kosher. boureka = borek + empanada The boureka was created!

0.5 cup of grated kashkaval cheese (or substitute another 1/3 cup feta)

0.5 cup of ricotta cheese

1 tsp of sesame or poppy seeds for topping (optional)
