Hummus is extremely healthy... and it's also quite cheap if you prepare it yourself. You can produce about three times as much hummus for the price of one store-bought tub, and it tastes so much better when prepared fresh. Nothing could be simpler if you have a food processor. Of course, you could crush it using a mortar and pestle, but it would need a lot of elbow grease. If you have access to a processor, I strongly suggest it.

3.5 cup of canned OR soaked and cooked chickpeas/garbanzo beans
1 tbsp of baking soda (optional - to help skin the chickpeas, then rinsed away - see instructions below)
8 qty of roasted garlic cloves , or more to taste (you may substitute 1-3 fresh garlic cloves if you prefer a stronger sharper flavor)
0.25 cup of fresh lemon juice , or more to taste
1 tbsp of extra virgin olive oil , plus more for garnish
0.75 tsp of cumin
0.5 tsp of salt, or more to taste
1 qty of Pinch cayenne pepper
1 qty of Paprika and fresh minced parsley for garnish optional
