This Greek creamy pasta salad, prepared with fresh seasonal products and the beloved spaghetti noodle, packed in Greek flavor combined with a handmade cashew pesto sauce.

Ingredients

1 cup of raw cashews, soaked*
4 qty of cloves garlic (raw or roasted)**
2 cup of basil, packed
2 tbsp of tahini
0.25 cup of olive oil
0.25 tsp of salt
1 qty of lemon, juiced
1 tbsp of water
1 tbsp of apple cider vinegar
1 lbs of rotini (or any kind of pasta)
1.5 cup of cherry tomatoes, halved
1 qty of large cucumber, chopped
0.9 lbs of can garbanzo beans, rinsed
0.75 cup of kalamata olives, pitted and halved
0.5 qty of large red onion, thinly sliced
