Falafel is a Middle Eastern dish that has a lengthy history in Arab nations and ancient Israel. The term falafel may derive from the Arabic word falfil, which is a plural of the word filfil, which means "pepper." These fried vegetarian fritters are often served with hummus and tahini sauce as part of a "falafel platter." They go well with toum, a Middle Eastern garlic sauce.

1 lbs of dry chickpeas (also known as garbanzo beans) - you must start with dry, do NOT substitute canned, they will not work!
0.5 tsp of baking soda
1 qty of small onion, roughly chopped
0.25 cup of chopped fresh parsley
3 qty of cloves garlic (I prefer roasted garlic cloves)
1.5 tbsp of flour or chickpea flour
1.75 tsp of salt
2 tsp of cumin
1 tsp of ground coriander
0.25 tsp of black pepper
0.25 tsp of cayenne pepper
1 qty of Pinch of ground cardamom
1 cup of baking powder (optional - makes the falafel more fluffy)
1 qty of Vegetable oil for frying - grapeseed, sunflower, avocado, canola, and peanut oils all work well
