Fattoush is a kind of "bread salad" that is believed to have originated in Northern Lebanon. For added taste, Lebanese farmers would fry leftover pita crumbs in olive oil. And to make their fattoush, they'd simply combine pita chips with whatever seasonal veggies and herbs they had on hand. As a result, the fattoush ingredient list may differ. And various variations of fattoush may be found all throughout the Middle East.

2 qty of loaves pita bread

1 qty of Extra virgin olive oil

1 qty of Kosher salt

2 tsp of sumac, divided, more as needed

1 qty of heart of Romaine lettuce, chopped

1 qty of English cucumber, cut in half, seeds scraped, then chopped or sliced into half moons

5 qty of Roma tomatoes, chopped

5 qty of green onions (both white and green parts), chopped

5 qty of radishes, stems removed, thinly sliced

2 cup of chopped fresh parsley leaves, stems removed

1 cup of chopped fresh mint leaves (optional)

1 qty of Juice of 1 lemon or 1 ½ limes

0.5 cup of extra virgin olive oil

1 tbsp of pomegranate molasses, optional

1 qty of Salt and pepper

1 tsp of sumac

0.25 tsp of ground cinnamon

0.25 tsp of ground allspice
