Ingredients

3 tbsp of soy sauce

1 cup of chicken pieces

0.5 lbs of rice noodles

3 qty of cloves garlic (minced)

1 qty of galangal (thumb-size, or ginger, sliced into matchstick-like pieces)

1 cup of shiitake mushrooms (fresh, sliced)

0.5 cup of stock (chicken or faux chicken stock for vegetarians)

1 qty of bell pepper (orange or green, sliced into thin strips)

3 cup of bean sprouts (fresh)

2 qty of green onions (sliced)

1 qty of Handful coriander/cilantro (fresh)

2.5 tbsp of oil

2 tbsp of soy sauce

1 tsp of dark soy sauce

1 tbsp of fish sauce

1 tsp of sugar

1 tbsp of lime juice

1.25 cup of stock (chicken or faux chicken/vegetable stock)

2 tsp of chili sauce (or 1/2 to 3/4 teaspoon cayenne pepper, to taste)
