Each salad component has its own set of health advantages. Fresh Persian cucumbers (peeled) are low in fat, high in water, and high in fiber. Fresh tomatoes include vitamins C and A, as well as cancer-fighting lycopene (organic tomatoes contain up to three times the lycopene of non-organic tomatoes!). Onions are high in chromium, a trace mineral that aids cell response to insulin. Onions have been proven to help reduce cholesterol and blood pressure as well as reducing blood sugar levels. Vitamin K is abundant in fresh parsley. It also contains vitamins C and A, as well as folate and anti-oxidants. Vitamin C, antioxidants, and potassium are abundant in lemon juice. It also acts as a natural diuretic. Olive oil has a good amount of MUFAs (mono unsaturated fatty acids) and may aid digestion.

0.5 cup of minced onion (optional)
0.5 cup of minced fresh parsley
3 tbsp of extra virgin olive oil
3 tbsp of fresh lemon juice
0.5 tsp of Salt to taste (I use about 1/2 tsp)
