Pizza

I was on a mini-pizza craze and had previously made Mexican and Italian versions, so I decided to go for a Mediterranean version and ended up with these.

Ingredients

1 tbsp of olive oil
8 qty of ounces lean ground beef (90% lean)
0.25 cup of finely chopped onion
2 qty of garlic cloves, minced
1 qty of can (8 ounces) tomato sauce
1 tsp of minced fresh rosemary or 1/4 teaspoon dried rosemary, crushed
2 qty of whole wheat pita breads (6 inches), cut in half horizontally
1 qty of medium tomato, seeded and chopped
0.5 cup of fresh baby spinach, thinly sliced
12 qty of Greek pitted olives, thinly sliced
0.5 cup of shredded part-skim mozzarella cheese
0.25 cup of crumbled feta cheese
