150 qty of grams of red quinoa, rinsed well and drained

1 tbsp of olive oil, for frying

0 qty of red onion, thinly sliced

200 qty of grams of sun-blushed tomatoes in oil, drained and halved

2 tbsp of freshly chopped fresh mint leaves

2 tbsp of freshly chopped flatleaf parsley

2 tbsp of finely snipped chives

1 tbsp of torn fresh basil leaves

100 qty of grams of feta, broken into pieces

50 qty of grams of pomegranate seeds, to garnish

1 qty of unwaxed lemon, finely grated zest and juice only (for dressing)

2 tbsp of pomegranate molasses (for dressing)

1 tsp of sugar (for dressing)

2 tbsp of olive oil (for dressing)
