Shakshuka is a North African dish that has gained popularity in the Middle East. This quick and simple egg meal is vegetarian, gluten-free, and very tasty.

Ingredients

1 tbsp of olive oil

1.5 qty of onion, peeled and diced

1 qty of clove garlic, minced

1 qty of bell pepper, seeded and chopped

4 cup of ripe diced tomatoes, or 2 cans (14 oz. each) diced tomatoes

2 tbsp of tomato paste

1 tsp of mild chili powder

1 tsp of cumin

1 tsp of paprika

1 qty of Pinch of cayenne pepper, or more to taste (careful, it's spicy!)

1 qty of Pinch of sugar (optional, to taste - omit for low carb)

1 qty of Salt and pepper, to taste

6 qty of eggs

1.5 qty of fresh chopped parsley (optional, for garnish)
