This shrimp fried cauliflower rice tastes just like the genuine thing (maybe even better!). However, it is healthier and simpler to prepare at home! It's packed with flavor, protein, vegetables, and healthy fats, making it a terrific weekday dinner that everyone will like - even the pickiest eaters! Paleo-friendly, Whole30-compliant, and keto-friendly.

Ingredients

1 lbs of medium-large raw shrimp peeled and deveined
1 tsp of tapioca flour or arrowroot*
1 tsp of Sea salt and black pepper
1 tbsp of avocado oil or ghee divided
3 qty of eggs whisked
1.5 cup of carrots diced
1 qty of bunch scallions white and green parts separated - thinly sliced
1 qty of inch chunk fresh ginger peeled and minced about 2 tsp
3 qty of cloves garlic minced
12 qty of oz cauliflower rice fresh or frozen. If frozen, thaw first.
0.25 cup of coconut aminos (this is a paleo and Whole30 friendly equivalent of soy sauce)
1 tbsp of pure sesame oil
