This Thai beef and broccoli stir-fry is even better than the Chinese version, with greater depth of flavor and a little more heat. The beef is finely sliced and stir-fried swiftly and simply with broccoli, red pepper, and a tasty stir-fry sauce. The broccoli really works in this meal since it absorbs the sauce completely and adds a great crunch.

3 tbsp of vegetable oil

1 qty of shallot

4 qty of cloves garlic (finely chopped)

2 qty of ginger (thumb-sized and thinly sliced into matchstick-like pieces)

3 tbsp of sherry (cooking sherry, or red wine)

1 qty of medium head broccoli (cut into bite-size florets)

1 qty of red pepper (sliced into thin strips)

1 tsp of cornstarch (dissolved in 3 tablespoons cool water)

1 tsp of sesame oil

3 tbsp of soy sauce

1 tsp of brown sugar

1 tsp of cornstarch

0.5 cup of chicken stock

3 qty of oyster-flavored sauce

1 tbsp of fish sauce

2 qty of brown sugar (to taste)

2 qty of red chilies (minced, or 1/2 to 3/4 teaspoons dried chili (crushed), to taste)
