They're a wonderful addition to menus when you need to present a variety of finger foods, as an appetizer, or as a main course option. The spring rolls are a great alternative for salad, but they also provide enough protein for a full meal.

2 tbsp of soy sauce, or wheat-free soy sauce for gluten-free diets
1 tbsp of rice vinegar
1 tbsp of fish sauce
1 tsp of brown sugar
1 cup of thin vermicelli rice noodles, cooked, rinsed in cold water, and drained
1 cup of cooked shrimp
1 cup of bean sprouts
0.5 cup of fresh Thai basil, roughly chopped
0.5 cup of fresh coriander, roughly chopped
0.25 cup of shredded carrot
3 qty of spring onions, cut into matchstick pieces
