0.5 tsp of ground coriander

1 qty of stalk lemongrass, minced

1 qty of thumb-sized piece ginger, grated

3 qty of cloves garlic, minced

1 cup of fresh cilantro leaves and stems, coarsely chopped

0.5 tsp of ground white pepper

0.25 cup of shallot (or purple onion)

1 qty of green chile, sliced

1 tsp of shrimp paste

2.5 tsp of fish sauce

1 tsp of brown sugar

1 tsp of fresh lime juice

0.5 tsp of ground cumin

0.25 qty of can coconut milk

2 tsp of peanut oil

1.5 lbs of boneless chicken breast (or chicken thighs), cut into bite-size pieces

1 qty of handful green beans (or 1 small zucchini or other vegetable of choice)

1 qty of medium red or green bell pepper, coarsely chopped

4 qty of makrut lime leaves (or 1 teaspoon grated lime zest)

4 cup of cooked jasmine rice
