Satay sauce is a slightly spicy peanut sauce. While it's popularly associated with Thai cuisine, it's enjoyed throughout Southeast Asia and has Indonesian roots. It's best known as the sauce for satay, a tasty appetizer of marinated meat (often chicken, pork, or beef) grilled on a skewer.

1 cup of unsalted fresh dry roasted peanuts
0.33 cup of 1/3 cup water
1 qty of 1 to 2 cloves garlic, minced
0.50 tsp of dark soy sauce
2 tsp of sesame oil
1 tbsp of 1 to 2 tablespoons fish sauce (or 1 1/2 to 2 1/2 tablespoons soy sauce)
0.50 tsp of 1/2 teaspoon tamarind paste (or 1/2 tablespoon lime juice)
0.50 tsp of 1/2 teaspoon cayenne pepper (or 1 teaspoon Thai chile sauce), more or less to taste
0.33 cup of 1/3 cup coconut milk
2 tbsp of brown sugar
