This Instant Pot Pearl Couscous and Lentil Salad is an easy dump-and-go Instant Pot recipe that’s a light, healthy vegan recipe perfect for summer. Featuring French green lentils, pearl couscous, and a zingy vinaigrette with lots of fresh herbs.

1 cup of pearl or Israeli couscous
3 1/2 cup of ow-sodium vegetable broth
2 tsp of kosher salt
Freshly cracked black pepper
2 bay leaves
Handful of fresh thyme sprigs
2 1/2 tbsp of extra-virgin olive oi
1 1/2 tbsp of red wine vinegar
1 cup of small bunch of fresh dill, finely chopped
1 cup of fresh Italian-flat leaf parsley, finely chopped
15 pitted green olives, sliced
1 pint cherry tomatoes, halved or quartered
