1 cup of French green lentils, rinsed and sorted

3 tsp of salt, to taste

1 tbsp of Dijon mustard (for Dijon Vinaigrette)

0.25 cup of olive oil (for Dijon Vinaigrette)

2 tbsp of sherry vinegar (or substitute red wine vinegar)(for Dijon Vinaigrette)

1 tsp of salt, to taste (for Dijon Vinaigrette)
