Kalops is a meal for the long Swedish winters, a rich delight to warm the metaphorical cockles. Prime beef cubes are simmered with red wine, onion, garlic, and carrots until they are tender and fall apart when pierced with a fork. It's comparable to a typical British or French beef stew in many respects, but it's distinguished by one important ingredient: allspice berries. These aromatic little numbers have a punchy, clove-like warmth and take the flavors up a notch when dried (you can also use ground allspice — it originates from the same plant). For authenticity, serve with boiled potatoes and pieces of pickled beetroot.

0.25 cup of red wine

1 qty of Water

1 qty of Salt to taste
