Step 1

Fry the onions with ginger and garlic paste on medium-low heat with 2tbsp. of oil until golden brown. Add all the spices, stir & cook for a further 2 minutes. Pour the lentils & chopped tomatoes, stir and cook for 5 minutes on medium heat. Pour in 3 cups of water with lemon juice, cook for around 8-10 minutes at a medium-low flame to reduce the liquid. Cover with a lid and cook for a further 15 minutes on a low flame until the lentils are tender. If the curry looks too thick, add a little more water. Season with salt & pepper and garnish with fresh parsley or coriander leaves just before serving.
