Chicken Adobo is a Filipino dish made by braising chicken legs (thighs and/or drumsticks) in a sauce made up of vinegar, soy sauce, garlic, and black pepper. It's tangy, salty, slightly sweet, and spicy. The chicken is simmered in the sauce making it flavorful and tender.

1 qty of green chiles (such as serrano or jalapeño), thinly sliced, seeds removed if desired, divided
1 tsp of Freshly ground black pepper
