Menudo is a Spanish-influenced dish that is popular in Filipino cuisine. Traditional menudo is commonly eaten for lunch or dinner and consists of cubes of pork simmered in tomato sauce with vegetables . This recipe uses ground pork instead, which is a practical variation and an easy way of making menudo.

US Customary


2 tbsp of olive oil

2 qty of cloves garlic, chopped

1 qty of small onion, chopped

1 lbs of (450 g) lean ground pork

1 tbsp of (15 ml) fish sauce

0.5 cup of 120 ml) tomato sauce

1.5 cup of (350 ml) water

1 cup of (128 g) diced carrots

1 qty of large potato, peeled and diced

1 qty of red or green bell pepper, seeded and diced

0.5 cup of 75 g) frozen green peas

0.5 cup of (75 g) raisins

1 tsp of Salt and freshly ground black pepper, to taste

1 cup of Steamed rice, for serving
