1 cup shredded cabbage
1 cup julienned carrots
1 cup thinly sliced bell peppers (assorted colors)
1 cup bean sprouts
1/2 cup sliced mushrooms
2 green onions, sliced
2 tablespoons soy sauce
1 tablespoon sesame oil
1 teaspoon grated ginger
1 teaspoon garlic powder
1/2 teaspoon sugar
1 tablespoon cornstarch (for sealing rolls)

In a large bowl, combine shredded cabbage, julienned carrots, sliced bell peppers, bean sprouts, sliced mushrooms, and green onions.


In a small bowl, whisk together soy sauce, sesame oil, grated ginger, garlic powder, and sugar. Pour the sauce over the vegetable mixture and toss until well combined.


Lay a spring roll wrapper on a clean surface with one corner pointing towards you.


Spoon about 2 tablespoons of the vegetable filling onto the bottom third of the wrapper.


Fold the bottom corner over the filling, tucking it under the vegetables.


Fold the sides of the wrapper inward, and then roll the spring roll tightly towards the top corner.


Mix cornstarch with a small amount of water to create a paste. Seal the top corner of the wrapper by brushing the cornstarch paste along the edge.


Repeat the process with the remaining wrappers and filling.


Preheat the air fryer to 375°F (190°C) for about 5 minutes.


Place the spring rolls in the air fryer basket in a single layer, ensuring they are not touching.


Air fry the spring rolls for 12-15 minutes, flipping them halfway through the cooking time, until they are golden and crispy.
