Over medium-high heat, preheat the same pan. Reserve marinade and fry beef in batches, 5 to 7 minutes, until browned and no longer pink in the center, adding additional vegetable oil as needed. Remove to a dish and repeat with the remaining beef.

Deglaze the pan with the remaining marinade and water, scraping up the browned bits from the bottom of the pan with a wooden spoon. Season with salt and pepper to taste. Return the beef to the pan with some of the onion, reserving the rest for garnish; decrease the heat to low and continue to cook until the sauce has thickened, about 7 to 10 minutes.
