8 fish cake fillets (store-bought or homemade)
8 spring roll wrappers
1 cup shredded lettuce
1 cup thinly sliced cucumber
1/2 cup sliced avocado
1/4 cup chopped fresh cilantro
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 teaspoon sesame oil
1 teaspoon grated ginger
1 teaspoon honey
1 tablespoon cornstarch (for sealing rolls)
Optional: Sriracha or sweet chili sauce for dipping

In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, grated ginger, and honey to create the dipping sauce. Set aside.
