West African Delight Jollof Rice is a vibrant and aromatic dish that reflects the diverse culinary traditions of the region. This one-pot wonder features long-grain parboiled rice cooked in a flavorful tomato-based sauce infused with spices. 2 cups long-grain parboiled rice
1/4 cup vegetable oil
1 large onion, finely chopped
3 large tomatoes, blended into a smooth puree
1 red bell pepper, blended into a smooth puree
1 green bell pepper, finely chopped
3 cloves garlic, minced
1 teaspoon ginger, grated
1 teaspoon thyme
1 teaspoon curry powder
1 teaspoon smoked paprika
2 bay leaves
2 cups vegetable or chicken broth
Salt and black pepper to taste
Optional: Cooked chicken, fish, or vegetables for serving

Rinse the rice under cold water until the water runs clear. Set aside.


In a large pot, heat vegetable oil over medium heat.


Add chopped onions and sauté until they become translucent.


Stir in minced garlic and grated ginger, cooking for an additional minute until fragrant.


Add the blended tomato and red bell pepper puree to the pot. Cook for about 10 minutes, stirring occasionally, until the mixture thickens and the oil begins to separate.


Stir in the thyme, curry powder, smoked paprika, and chopped green bell pepper. Cook for another 5 minutes.


Add the rinsed rice to the pot, stirring well to coat the rice with the tomato mixture.


Pour in the vegetable or chicken broth, add bay leaves, and season with salt and black pepper. Bring the mixture to a boil.


Once boiling, reduce the heat to low, cover the pot with a tight-fitting lid, and simmer for 25-30 minutes or until the rice is tender and has absorbed the liquid.


Optional: In the last 10 minutes of cooking, add cooked chicken, fish, or vegetables to the pot and gently stir to combine.


Remove the pot from heat, fluff the rice with a fork, and let it sit, covered, for an additional 5 minutes.


Serve the West African Delight Jollof Rice hot, with your choice of protein or vegetables.
