2 cups black-eyed peas, soaked overnight
1 medium onion, chopped
2 red bell peppers, chopped
2 tomatoes, chopped
1 scotch bonnet pepper (adjust to taste), chopped
1/2 cup vegetable oil
1 cup broth (vegetable or chicken)
1 teaspoon ground crayfish
1 teaspoon ground pepper (adjust to taste)
1 teaspoon ground nutmeg
1 cup cooked and shredded fish or minced meat (optional)
Salt to taste
Banana leaves or foil for wrapping

Drain and rinse the soaked black-eyed peas.


In a blender, blend the black-eyed peas with a minimal amount of water until you achieve a smooth batter.


In a large bowl, combine the blended black-eyed peas with chopped onions, red bell peppers, tomatoes, and scotch bonnet pepper. Mix well.


In a separate bowl, combine vegetable oil, broth, ground crayfish, ground pepper, ground nutmeg, beaten eggs, and shredded fish or minced meat (if using). Mix this liquid mixture into the bowl with the blended beans and vegetables.


Season the mixture with salt to taste and stir until all ingredients are well incorporated.


Prepare the banana leaves or foil for wrapping by cutting them into square pieces.


Grease the banana leaves or foil with a small amount of vegetable oil to prevent sticking.


Scoop portions of the Moi Moi mixture into the prepared leaves or foil, ensuring they are well-sealed.
