Ingredients

• 3–4 medium potatoes, peeled and cubed
• 2 cups marinated beets (or fresh, grated beets)
• 1 medium onion, diced
• 4 cloves garlic, minced
• 300g smoked ribs, cut into pieces
• 300g beef meatballs (pre-made or homemade)
• 2 chicken bouillon cubes
• Salt (to taste)
• Black pepper (to taste)
• 3 chili peppers (whole or sliced)
• 1 tsp herbes de Provence
• 1/2 tsp cayenne pepper
• 1 tsp sweet paprika
• Optional: 1 cup frozen mushrooms (baravykai) or cooked beans
• Fresh dill, parsley, and chives for garnish

Cube the potatoes, dice the onion, and mince the garlic. If using fresh beets, grate them finely. Cut the smoked ribs into serving pieces and prepare the meatballs.

In the Ninja Foodi, add the potatoes, beets, onion, garlic, smoked ribs, and meatballs. If using frozen mushrooms or beans, add them at this stage. Sprinkle with herbes de Provence, cayenne pepper, and sweet paprika. Crumble in the bouillon cubes and add enough water to just cover the ingredients.

Step

Set the Ninja Foodi to "Pressure Cook" mode and cook for 5 minutes with Quick Release.

After releasing the pressure, open the lid and taste the soup. Adjust the seasoning with salt and black pepper as needed. Ladle the soup into bowls and garnish with fresh dill, parsley, and chives.
