Pork accordion with tomatoes, cheese, mushrooms and onions
Tender, juicy. And it looks very nice.
For my taste, a side dish for this meat is not needed. But if you want, you can cook potatoes or rice.
From the indicated amount of ingredients, 6-8 servings are obtained.
1 kg pork (ideally loin)
200 g mushrooms
150 g tomatoes
100 g cheese
150 g onion
Onion cut into rings.
Cut the tomatoes into circles.
Slice the mushrooms thinly.
Slice the cheese thinly.
In a piece of pork, make cuts (not reaching the end), with a distance of about 0.5–1 cm.
Salt and pepper each cut.
Insert tomatoes and cheese into one cut, mushrooms and onions into the other.
Again tomato and cheese, mushrooms and onions.
Lubricate with mustard.
Wrap in foil.
Pour into a baking dish.
Put in the oven.
Bake at 180 degrees for 1.5 hours.
Cut the finished meat, trying to get tomatoes, cheese and mushrooms, onions into each serving.
