In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent and fragrant.

Stir in the diced bell peppers and carrots, cooking for a few more minutes until the vegetables start to soften.

Add the diced tomatoes, cooked chickpeas, vegetable broth, smoked paprika, ground cumin, dried oregano, salt, and pepper to the pot. Stir well to combine all the ingredients.

Bring the stew to a boil, then reduce the heat to low. Cover the pot and let the stew simmer for about 1 hour, allowing the flavors to meld together and the vegetables to become tender.

Taste and adjust the seasoning if needed, adding more salt, pepper, or spices according to your preference.

Once the stew is ready, ladle it into bowls and garnish with freshly chopped parsley.

Serve the Spanish Chickpea Stew as a main course, accompanied by crusty bread or rice for a complete and satisfying meal.

Tips for this recipe

For an extra layer of flavor, you can add a splash of sherry vinegar or a squeeze of lemon juice to the stew just before serving. This will add a tangy brightness to the dish. Allow the stew to cool slightly before storing any leftovers, as the flavors tend to deepen and develop further with time.
