3 tablespoons soy sauce
2 tablespoons rice vinegar
1 tablespoon hoisin sauce
1 tablespoon chili garlic sauce (adjust to your preferred level of spiciness)
2 teaspoons sugar
1 teaspoon sesame oil
1/2 teaspoon grated fresh ginger
2 cloves garlic, minced
8 ounces Hakka noodles or any noodles of your choice
2 tablespoons vegetable oil
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 cup snap peas or snow peas, trimmed

In a small bowl, whisk together the soy sauce, rice vinegar, hoisin sauce, chili garlic sauce, sugar, sesame oil, grated ginger, and minced garlic. Adjust the chili garlic sauce to your preferred level of spiciness. Set the sauce aside.


Cook the Hakka noodles (or your choice of noodles) according to the package instructions until they are al dente. Drain, rinse with cold water to stop the cooking process, and set aside.


In the same skillet, add the remaining tablespoon of vegetable oil. Add the sliced red and yellow bell peppers, broccoli florets, and snap peas or snow peas. Stir-fry the vegetables for about 4-5 minutes or until they are crisp-tender.
