1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
2 carrots, chopped
2 stalks celery, chopped
1 zucchini, chopped
1 yellow squash, chopped
1 red bell pepper, chopped
1 can (14 oz) diced tomatoes, undrained
4 cups chicken or vegetable broth
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup uncooked elbow macaroni

In a large pot or Dutch oven, heat the olive oil over medium heat.


Add the onion and garlic and sauté for 2-3 minutes, until softened.


Add the carrots, celery, zucchini, yellow squash, and red bell pepper and sauté for 5-7 minutes, until the vegetables are tender.


Add the diced tomatoes, broth, thyme, salt, and pepper and bring the soup to a boil.


Reduce the heat and simmer the soup for 10-15 minutes.


Add the macaroni and continue to simmer for an additional 8-10 minutes, or until the macaroni is cooked.


Ladle the soup into bowls and serve hot.

Tips for this recipe

Add some grated cheese or a dollop of sour cream on top of each bowl for some extra flavor and creaminess.
