2 medium zucchini
100 gr. feta (Greek cheese)
1/4 cup chopped olives
2 tablespoons fresh basil, finely chopped
2 tablespoons olive oil
Salt and pepper to taste
Preheat the oven to 200 degrees Celsius.
Slice the zucchini in half lengthwise and remove the seeds to make boats.
Place the zucchini boats on a baking tray and drizzle them with one tablespoon of olive oil. Season with salt and pepper to taste.
Bake the zucchini boats in the preheated oven for 10-15 minutes, or until they are soft and lightly golden.
While the zucchini is baking, whisk together the feta, chopped olives and basil. Add the second tablespoon of olive oil and mix well.
When the zucchini are ready, remove them from the oven and let them cool slightly.
Fill each zucchini boat with the prepared feta, olives and basil mixture.
Serve the zucchini boats warm or cool as an appetizer or side dish to a main course.
