The Basic Recipe: A Starting Point

Instructions:

  1. Create a Well: On a clean work surface (a wooden board is ideal), mound the flour and create a well in the center.
  2. Add Wet Ingredients: Crack the eggs into the well, add the olive oil and salt.
  3. Incorporate the Flour: Using a fork, gently whisk the eggs and slowly start incorporating the flour from the inside walls of the well. Continue until a shaggy dough forms.
  4. Knead the Dough: Once the dough comes together, use your hands to knead it for 8-10 minutes. The dough should become smooth and elastic. If it's too dry, add a teaspoon of water at a time. If it's too sticky, add a little flour.
  5. Rest the Dough: Wrap the dough tightly in plastic wrap and let it rest at room temperature for at least 30 minutes. This allows the gluten to relax, making it easier to roll out.
  6. Roll Out the Dough: There are two ways to roll out the dough: by hand with a rolling pin or using a pasta machine. A pasta machine makes the process significantly easier and more consistent. Start with the widest setting and gradually decrease the thickness, passing the dough through each setting until you reach your desired thickness.
  7. Cut the Pasta: Once the dough is rolled out, you can cut it into your desired shape. For tagliatelle or fettuccine, use the cutting attachment on your pasta machine. For ravioli or tortellini, cut the dough into squares or circles.
  8. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook for 2-3 minutes, or until it floats to the surface. Fresh pasta cooks much faster than dried pasta.

Beyond the Basics: Experimentation and Flavor
