Ingredients

  • all-purpose flour - 2.0 cup
  • granulated sugar - 2.0 tbsp
  • baking powder - 2.0 tsp
  • baking soda - 0.5 tsp
  • salt - 0.5 tsp
  • large eggs - 2.0 pcs
  • buttermilk - 2.0 cup
  • unsalted butter, melted - 2.0 tbsp
  • vanilla extract - 1.0 tsp
  • apples, peeled, cored, and thinly sliced (e.g., Granny Smith or Honeycrisp) - 2.0 pcs

Cooking Steps

Step 1

In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

Step 2

In another bowl, whisk the eggs, then add buttermilk, melted butter, and vanilla extract. Mix until the wet ingredients are thoroughly combined.

Step 3

Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.

Step 4

Gently fold in the thinly sliced apples, ground cinnamon, and ground nutmeg until they are evenly distributed in the batter.

Step 5

Preheat a large skillet or frying pan over medium-low heat and lightly grease it with cooking spray or melted butter.

Step 6

Pour a ladleful of the apple pancake batter onto the skillet, forming a large pancake. Cook until bubbles form on the surface and the edges start to set, about 2-3 minutes.

Step 7

Carefully flip the pancake and cook the other side until golden brown and the apples are tender, about 2-3 minutes more.

Step 8

Repeat the process with the remaining batter, adjusting the size of the pancakes as desired.

Step 9

Serve your Apple Puff Pancakes warm, garnished with additional apple slices and a dusting of powdered sugar if desired. Enjoy!
