
Marinate the Chicken: In a bowl, combine the cubed chicken with ginger-garlic paste, garam masala, turmeric powder, red chili powder, lemon juice, and salt. Mix well and let it marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
Prepare the Sauce Base: In a large pan or pot, melt butter over medium heat. Add finely chopped onions and sauté until golden brown. Stir in the remaining ginger-garlic paste and sauté for another minute.
Add Tomatoes and Spices: Add the tomato puree, tomato paste, garam masala, turmeric powder, red chili powder, and sugar to the pan. Stir well and cook for about 10-15 minutes, until the sauce thickens and the raw smell of tomatoes disappears.
Cook the Chicken: Add the marinated chicken to the sauce. Cook until the chicken is cooked through, stirring occasionally to prevent sticking. This should take about 15-20 minutes.
Add Cream and Butter: Stir in the heavy cream and crushed kasuri methi (dried fenugreek leaves). Simmer for another 5 minutes, allowing the flavors to meld together. Add extra butter for richness.
Garnish and Serve: Garnish with fresh cilantro leaves. Serve hot with naan bread, rice, or roti. Enjoy!
