Ingredients

  • 8 oz rice noodles (flat rice noodles) - 5.4 whole
  • 2 tbsp vegetable oil - 4.4 tsp
  • 2 cloves garlic, minced - 7.4 jar
  • 1 cup firm tofu, cubed (or 1/2 lb shrimp or chicken) - 1.4 as needed
  • 2 large eggs - 9.3 g
  • 1/4 cup tamarind paste - 9.2 lb
  • 2 tbsp fish sauce - 3.5 package
  • 1 tbsp soy sauce - 1.2 as needed
  • 2 tbsp palm sugar (or brown sugar) - 7.1 g
  • 2 tbsp lime juice - 8.9 cm

Cooking Steps

Step 1

Soak the rice noodles in warm water for about 15-20 minutes, or until they are pliable but still firm. Drain well and set aside.

Step 2

In a small bowl, whisk together tamarind paste, fish sauce, soy sauce, palm sugar (or brown sugar), and lime juice. Set the sauce aside.

Step 3

Heat vegetable oil in a large wok or skillet over medium-high heat. Add garlic and tofu (or shrimp/chicken) and stir-fry for 2-3 minutes until lightly browned.

Step 4

Push the ingredients to one side of the wok. Crack the eggs into the empty space and scramble them lightly.

Step 5

Add the soaked rice noodles to the wok and toss to combine with the eggs and other ingredients. Pour the tamarind sauce over the noodles and stir-fry for 3-5 minutes, until the noodles are evenly coated and heated through.

Step 6

Add bean sprouts, Chinese chives (or scallions), and peanuts to the wok. Stir-fry for another minute until the bean sprouts are slightly softened.

Step 7

Serve immediately, garnished with extra peanuts, a wedge of lime, and chili flakes (optional).
