Sauté the Meats: Add chicken pieces to the pan and cook until browned. Then, add chorizo and cook for a few minutes until it releases its flavors.
Incorporate Seafood: Add shrimp and mussels to the pan. Cook until the shrimp turns pink and the mussels open, discarding any that do not open.
Add Rice and Saffron: Stir in the paella rice, ensuring it is evenly distributed. Add saffron threads and cook for a minute to toast the rice.
Pour in Broth: Pour in hot chicken or seafood broth, ensuring the rice and other ingredients are submerged. Season with salt and pepper.
Simmer and Cook: Bring the mixture to a boil, then reduce heat to low. Simmer uncovered for about 20 minutes, or until the rice is cooked and the liquid is absorbed. Avoid stirring to allow the socarrat to form.
Rest and Serve: Remove from heat and let it rest for 10 minutes. Garnish with lemon wedges and fresh parsley before serving.
