This paella recipe, originating from Valencia, Spain, combines saffron-infused rice with a medley of seafood, chicken, and vegetables. The dish begins with a flavorful sofrito, followed by the careful layering of ingredients and broth. It is cooked in a paella pan to achieve a socarrat, a prized crispy bottom layer. Garnished with lemon wedges and fresh parsley, this paella offers a symphony of flavors and textures.

Ingredients

  • 2 cups paella rice (Bomba or Arborio) - 1.9 whole
  • 1 lb chicken, cut into pieces - 6.8 g
  • 1/2 lb chorizo, sliced - 3.5 cup
  • 1 lb shrimp, peeled and deveined - 7.9 l
  • 1 lb mussels, scrubbed - 7.9 tsp
  • 1 large onion, chopped - 8.9 quarter
  • 4 cloves garlic, minced - 6.1 inch
  • 2 ripe tomatoes, grated - 3.5 cm
  • 6 cups chicken or seafood broth, hot - 0.7 bottle
  • 1/2 tsp saffron threads - 4.6 jar

Cooking Steps

Step 1

Prepare the Sofrito: In a paella pan, heat olive oil over medium heat. Add chopped onions and sauté until softened. Add minced garlic and cook until fragrant. Stir in grated tomatoes and cook until the mixture thickens.

Step 2

Sauté the Meats: Add chicken pieces to the pan and cook until browned. Then, add chorizo and cook for a few minutes until it releases its flavors.

Step 3

Incorporate Seafood: Add shrimp and mussels to the pan. Cook until the shrimp turns pink and the mussels open, discarding any that do not open.

Step 4

Add Rice and Saffron: Stir in the paella rice, ensuring it is evenly distributed. Add saffron threads and cook for a minute to toast the rice.

Step 5

Pour in Broth: Pour in hot chicken or seafood broth, ensuring the rice and other ingredients are submerged. Season with salt and pepper.

Step 6

Simmer and Cook: Bring the mixture to a boil, then reduce heat to low. Simmer uncovered for about 20 minutes, or until the rice is cooked and the liquid is absorbed. Avoid stirring to allow the socarrat to form.

Step 7

Rest and Serve: Remove from heat and let it rest for 10 minutes. Garnish with lemon wedges and fresh parsley before serving.
