Ingredients

  • 8 oz rice noodles - 1.5 half
  • 1/4 cup tamarind paste - 3.7 package
  • 2 tbsp fish sauce - 1.3 package
  • 2 tbsp soy sauce - 0.7 ml
  • 2 tbsp palm sugar (or brown sugar) - 9.1 half
  • 2 tbsp lime juice - 4.8 tsp
  • 2 tbsp vegetable oil - 2.0 can
  • 4 oz firm tofu, cubed - 1.3 lb
  • 8 oz shrimp, peeled and deveined - 8.3 pinch
  • 2 cloves garlic, minced - 5.6 half

Cooking Steps

Step 1

Soak the rice noodles in warm water for 15-20 minutes until softened. Drain well and set aside.

Step 2

In a small bowl, whisk together tamarind paste, fish sauce, soy sauce, palm sugar, and lime juice to make the Pad Thai sauce. Set aside.

Step 3

Heat vegetable oil in a large wok or skillet over medium-high heat. Add tofu and shrimp and stir-fry until the shrimp is pink and the tofu is golden brown. Remove from the wok and set aside.

Step 4

Add garlic to the wok and stir-fry until fragrant. Push the garlic to one side, crack the eggs into the wok, and scramble them. Then, mix the eggs with the garlic.

Step 5

Add the soaked rice noodles to the wok and pour the Pad Thai sauce over them. Stir-fry until the noodles are evenly coated and heated through.

Step 6

Return the shrimp and tofu to the wok. Add bean sprouts, and chives. Stir-fry for another minute until the bean sprouts are slightly softened.

Step 7

Garnish with chopped peanuts, fresh cilantro, and a lime wedge. Serve immediately and enjoy!
