
Soak the rice noodles in warm water for 15-20 minutes until softened. Drain well and set aside.
In a small bowl, whisk together tamarind paste, fish sauce, soy sauce, palm sugar, and lime juice to make the Pad Thai sauce. Set aside.
Heat vegetable oil in a large wok or skillet over medium-high heat. Add tofu and shrimp and stir-fry until the shrimp is pink and the tofu is golden brown. Remove from the wok and set aside.
Add garlic to the wok and stir-fry until fragrant. Push the garlic to one side, crack the eggs into the wok, and scramble them. Then, mix the eggs with the garlic.
Add the soaked rice noodles to the wok and pour the Pad Thai sauce over them. Stir-fry until the noodles are evenly coated and heated through.
Return the shrimp and tofu to the wok. Add bean sprouts, and chives. Stir-fry for another minute until the bean sprouts are slightly softened.
Garnish with chopped peanuts, fresh cilantro, and a lime wedge. Serve immediately and enjoy!
