Ingredients

  • 2 tbsp olive oil - 8.8 mg
  • 1 lb chicken, cut into pieces - 9.0 whole
  • 4 oz chorizo, sliced - 9.4 half
  • 1 onion, chopped - 8.9 fl oz
  • 1 bell pepper, chopped - 1.4 to taste
  • 2 cloves garlic, minced - 5.0 as needed
  • 2 tbsp tomato paste - 2.2 l
  • 1 cup paella rice or medium-grain rice - 2.0 pinch
  • 1/2 tsp saffron threads - 3.0 mg
  • 4 cups chicken broth - 8.9 as needed

Cooking Steps

Step 1

In a large paella pan or wide skillet, heat olive oil over medium heat. Add chicken and chorizo; cook until browned. Remove from pan and set aside.

Step 2

Add onion, bell pepper, and garlic to the pan. Cook until softened, about 5 minutes. Stir in tomato paste and cook for another minute.

Step 3

Add rice and saffron to the pan; stir to coat with the vegetable mixture. Cook for 1 minute.

Step 4

Pour in chicken broth and bring to a boil. Reduce heat to low, add salt, and simmer uncovered for 20 minutes, without stirring.

Step 5

Arrange chicken, chorizo, and shrimp over the rice. Add peas and cook for another 15-20 minutes, or until the rice is cooked and the liquid is absorbed.

Step 6

Let the paella rest for 10 minutes before serving. Garnish with fresh parsley and lemon wedges.
