
Prepare the Sofrito: In a paella pan or large skillet, heat olive oil over medium heat. Add diced onion and cook until softened. Add minced garlic and cook until fragrant. Stir in diced tomatoes and cook until the mixture thickens slightly.
Add Rice and Saffron: Stir in the paella rice (Bomba or Arborio) ensuring it is evenly distributed. Add saffron threads and cook for a minute to release their aroma.
Pour in Broth: Pour in the hot chicken or seafood broth, ensuring it covers the rice evenly. Season with salt and smoked paprika.
Arrange Seafood and Chorizo: Arrange shrimp, mussels, clams, and chorizo slices over the rice. Gently press them into the rice.
Simmer: Bring the mixture to a simmer, then reduce heat to low. Cook uncovered for about 20-25 minutes, or until the rice is tender and the liquid is absorbed. Do not stir the paella during cooking to allow the socarrat (crispy bottom layer) to form.
Rest: Once the paella is cooked, remove it from the heat and let it rest for 10 minutes before serving.
Garnish and Serve: Garnish with fresh parsley and lemon wedges. Serve immediately.
