Ingredients

  • rolled oats - 1.0 cup
  • water - 2.0 cup
  • ripe bananas - 2.0 whole
  • chopped walnuts or pecans - 0.3 cup
  • milk (dairy or non-dairy) - 0.3 cup
  • honey or maple syrup - 2.0 tbsp
  • ground cinnamon - 0.5 tsp
  • vanilla extract - 0.5 tsp
  • sliced bananas - 1.0 whole
  • extra nuts - 1.0 tbsp

Cooking Steps

Step 1

Heat a small skillet over medium heat. Add the chopped nuts and toast them, stirring occasionally, until they become fragrant and lightly browned. Remove from heat and set aside.

Step 2

In a medium-sized saucepan, combine the rolled oats and water. Add a pinch of salt. Bring the mixture to a boil over medium-high heat, then reduce the heat to low and simmer for about 5-7 minutes, stirring occasionally. The oats should become creamy and thick.

Step 3

Stir in the mashed bananas, ground cinnamon, vanilla extract, and honey or maple syrup (if using). Continue to cook for another 2-3 minutes, or until the oats are thoroughly cooked and everything is well combined.

Step 4

If the oatmeal is too thick, you can add more milk to reach your desired consistency. Stir in the milk gradually until you achieve the desired creaminess.

Step 5

Divide the Banana Nut Oatmeal into serving bowls. Top each bowl with a sprinkle of toasted nuts and sliced bananas for extra texture and flavor.
