A simple and tasty recipe for fluffy banana pancakes made with ripe bananas and pantry staples. These pancakes are easy to make and perfect for a fun and nutritious breakfast or brunch.

Ingredients

  • ripe bananas, mashed - 2.0 pcs
  • eggs - 2.0 pcs
  • milk - 0.5 cup
  • vanilla extract - 1.0 tsp
  • all-purpose flour - 1.0 cup
  • sugar - 1.0 tbsp
  • baking powder - 2.0 tsp
  • salt - 0.5 tsp
  • Cooking spray or butter - 1.0 as needed

Cooking Steps

Step 1

In a large bowl, whisk together the mashed bananas, eggs, milk, and vanilla extract until smooth.

Step 2

In another bowl, whisk together the flour, sugar, baking powder, and salt.

Step 3

Add the dry ingredients to the banana mixture and stir until just combined.

Step 4

Heat a non-stick skillet or griddle over medium heat and coat with cooking spray or butter.

Step 5

Using a 1/4 cup measure, pour the batter onto the skillet or griddle and cook until bubbles form on the surface and the edges begin to dry, about 2-3 minutes.

Step 6

Flip the pancake and cook until the other side is golden brown, about 1-2 minutes.

Step 7

Repeat with the remaining batter, adding more cooking spray or butter to the pan as needed.

Step 8

Serve the pancakes warm with your favorite toppings and enjoy!
