Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes - 2.2 gal
  • 4 oz bacon, diced - 8.1 package
  • 1 large onion, chopped - 3.1 whole
  • 2 carrots, chopped - 9.4 dash
  • 2 cloves garlic, minced - 3.3 cm
  • 1/4 cup all-purpose flour - 2.0 can
  • 1 bottle (750ml) dry red wine (Burgundy or Pinot Noir) - 4.3 jar
  • 2 cups beef broth - 10.3 to taste
  • 2 tbsp tomato paste - 2.0 cup
  • 1 tsp dried thyme - 7.0 bottle

Cooking Steps

Step 1

Preheat your oven to 325°F (160°C).

Step 2

In a large Dutch oven or oven-safe pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the rendered fat in the pot.

Step 3

Season the beef cubes with salt and pepper. Dredge them in flour, shaking off any excess.

Step 4

In the same pot, brown the beef cubes in batches. Remove the beef and set aside.

Step 5

Add the onions and carrots to the pot and cook until softened, about 5-7 minutes. Add the garlic and cook for another minute.

Step 6

Return the beef and bacon to the pot. Pour in the red wine and beef broth. Add the tomato paste, thyme, and bay leaf. Bring to a simmer.

Step 7

Cover the pot and transfer it to the preheated oven. Braise for 2.5 to 3 hours, or until the beef is very tender.

Step 8

Remove the pot from the oven. Add the mushrooms and cook on the stovetop over medium heat for about 10 minutes, or until the mushrooms are tender.

Step 9

Season with salt and pepper to taste. Serve hot with mashed potatoes or crusty bread.
