Preheat oven to 325°F (160°C). Cut beef into 1-inch cubes. Season generously with salt and pepper.
In a large Dutch oven or oven-safe pot, heat olive oil over medium-high heat. Brown the beef in batches, ensuring not to overcrowd the pot. Remove beef and set aside.
Add bacon to the pot and cook until crispy. Remove bacon and set aside, leaving the rendered fat in the pot. Add onion, carrots, and celery to the pot and cook until softened, about 5-7 minutes.
Stir in garlic and tomato paste and cook for 1 minute. Return the beef and bacon to the pot. Pour in red wine and beef broth, ensuring the beef is mostly submerged. Add bouquet garni (thyme, parsley, bay leaf tied together).
Bring to a simmer, then cover the pot and transfer to the preheated oven. Braise for 2.5-3 hours, or until the beef is very tender.
In the last 30 minutes of cooking time, sauté mushrooms in a separate pan with butter until browned. Add the sautéed mushrooms to the stew.
Remove bouquet garni. Season with salt and pepper to taste. Serve hot with mashed potatoes or crusty bread.
Absolutely phenomenal! This is the best Beef Bourguignon I've ever tasted. The recipe is straightforward and easy to follow, and the results are simply outstanding. Highly recommended.
Very tasty. I added some carrots along with the other vegetables, and it worked out great. The wine braising really does make a difference. A great recipe overall.
A decent recipe, but it could use a little something extra. I felt like the sauce was a bit thin. I might try thickening it with a bit of flour next time. The beef was tender enough, though.
It was okay. I felt like the recipe was missing a certain 'wow' factor. I might try adding some herbs next time to boost the flavor profile.
Very comforting and flavorful dish. I appreciated the detailed instructions. The bouquet garni really made a difference in the aroma. It's a bit time-consuming, but worth it for a special occasion.
