Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes - 3.3 package
  • 4 oz bacon, chopped - 0.7 pt
  • 1 large onion, chopped - 7.2 pinch
  • 2 carrots, chopped - 0.5 kg
  • 2 cloves garlic, minced - 7.4 kg
  • 2 tbsp tomato paste - 8.7 jar
  • 1 bottle (750ml) dry red wine (such as Burgundy or Pinot Noir) - 9.2 qt
  • 2 cups beef broth - 5.2 lb
  • 1 tsp dried thyme - 3.9 oz
  • 1 bay leaf - 1.8 drop

Cooking Steps

Step 1

Preheat oven to 325°F (160°C). In a large Dutch oven or oven-safe pot, cook bacon over medium heat until crisp. Remove bacon and set aside, reserving the rendered fat in the pot.

Step 2

Season beef cubes with salt and pepper. In batches, brown the beef in the bacon fat over medium-high heat. Remove beef and set aside.

Step 3

Add chopped onion and carrots to the pot and cook until softened, about 5-7 minutes. Add minced garlic and cook for another minute until fragrant.

Step 4

Stir in tomato paste and cook for 1-2 minutes. Pour in red wine, scraping up any browned bits from the bottom of the pot. Bring to a simmer.

Step 5

Return beef and bacon to the pot. Add beef broth, thyme, and bay leaf. Bring to a simmer, then cover and transfer to the preheated oven.

Step 6

Braise in the oven for 2.5-3 hours, or until beef is very tender. In the last 30 minutes of cooking, add sliced mushrooms to the pot.

Step 7

Remove bay leaf and thyme sprigs before serving. Garnish with fresh parsley, if desired. Serve hot with mashed potatoes or crusty bread.
